Easy one-pot chicken and yam rice recipe that is simply delectable; sumptuous meal that can be ready fast, with the help of the rice-cooker!

1 tbsp (17g)Dark soya sauce

50gChinese dried sausage, slice 2mm thick

15gHua Tiao Wine

160gYam, cut cube 2cm by 2cm

1 packetPrima Taste Hainanese Chicken Rice Paste

400gThai jasmine rice, long grain

440gWater

18gDried scallops, rinsed twice

15gOld ginger slices

15gSpring onion, cut 4cm length
Steps
- 1. Marinate the chicken with corn flour for 30 mins. Set aside.
- 2. Heat up a pan on medium heat with oil, add sliced shallot, sliced ginger and whole garlic. Stir-fry for 1 min.
- 3. Add pork belly, marinated chicken, shiitake mushrooms, dried shrimp, white pepper powder, oyster sauce, dark soya sauce, Chinese dried sausage and stir-fry for 1 – 2 mins or till fragrant.
- 4. Mix together Hua Tiao Wine and water. Set aside.
- 5. Wash the rice for 2 – 4 times and dry the grains. Add into the rice cooker.
- 6. Mix the Prima Taste Hainanese Chicken Rice Paste with water and pour into the rice cooker together with dried scallops and ginger. Cook for 8 – 10 mins.
- 7. Open the rice cooker and stir the rice. Add in the fried ingredients and yam evenly.
- 8. Continue to cook them for 16 mins.
- 9. Rest for 5 mins.
- 10. Add spring onion into the rice.
- 11. Mix well.
- 12. Chicken and Yam Rice is ready to be served.
