- STANDARD COOKING STEPS
- 1. Add Soup Base in water and bring to boil.
- 2. Add noodles and low boil for 7 mins.
- GOURMET COOKING STEPS
- 1. Add Soup Base in water and bring to boil.
- 2. Add noodles and low boil for 7 mins.
- 3. At the 5th min, add tomatoes.
- 4. At the last min, add choy sum, fish, fried shallot with oil and hua tiao wine.
- 5. Garnish with sliced red chilli, chopped garlic and fried shallot with oil. Top with crispy pork lard, ginger and spring onion.
- PREPARATION: FOR TOMAN FISH
- 1. Mix the fish with 4g salt and 25ml water until starchy.
- 2. Refrigerate for 30 mins.
- 3. Rinse well with water before cooking.
- PREPARATION: FOR CRISPY PORK LARD
- 1. In a bowl, add 100ml water and 5g salt and mix well. Add 200g pork lard cubes and soak for 15 mins. Strain pork lard cubes.
- 2. In a wok on medium high heat, add pork lard cubes. Fry till golden brown and crispy.
- 3. Strain through a sieve to separate pork lard oil and crispy pork lard.
